      Our dried King Oyster mushroom rehydrates into a thick, meaty treasure with a savory umami depth. It provides a robust, satisfying texture that elevates any gourmet dish from simple to extraordinary.

      Celebrated for its dense nutritional profile, King Oyster is a natural powerhouse of ergothioneine, a unique antioxidant that protects cells from oxidative stress. Rich in essential minerals and statins that support cardiovascular health, this culinary mushroom works behind the scenes to promote healthy cholesterol levels and bolster your natural immune defences.

      This King Oyster comes dehydrated/dried. To prepare, simply soak the mushrooms in warm water or broth for 20-30 minutes, allowing them to regain their firm, succulent bite before searing or sautéing to perfection.

      KING OYSTER (Pleurotus eryngii) is a regal gourmet mushroom prized for its thick, meaty stem and firm, succulent texture. King Oyster mushrooms have a gentler flavour and absorbs flavour whilst maintaining texture, making it great for soups, pastas, pizza or you can even batter & fry to make oyster nuggets!

      Taste Profile

      Mild and earthy with a savoury umami depth, offering a satisfying, steak-like bite that serves as an excellent plant-based meat alternative.

      PREPERATION

      • Rehydrate: Soak in warm water for 30 minutes or until supple. Save the soaking liquid - it’s delicious, nutrient dense,& makes great stocks, broths & sauces.
      • Weight ratio: Approx 8:1. This means 100g of dried King Oyster will become approx 800g once rehydrated.

      COOKING

      • The Scallop Cut: Cut into medallions and sear in butter or oil for a luxurious, scallop-like texture and flavour.
      • The Oven Roast: Roast at 200°C for 15–20 minutes to concentrate umami & create crisp edges with a tender centre.
      • The Hearty Simmer: Braise or stew for 30+ minutes; King Oyster absorbs broths & sauces while retaining a satisfying bite.
