LION’S MANE (Hericium erinaceus) is a majestic gourmet mushroom prized for its tender, seafood-like texture. Naturally rich in prebiotic fibers that nourish a healthy gut, it’s also valued for its neuroprotective properties that support gut-brain health.
TASTE PROFILE
Subtle, slightly sweet, and remarkably reminiscent of crab or crayfish. Great in carbonara pasta, pizzas or grilled on the BBQ.
PREPARATION
- Rehydrate: Soak in warm water for 30–45 minutes until fully supple.
- The Golden Rule: Never toss the soaking liquid! It is a nutrient-dense "umami bomb" perfect for deglazing pans or as a base for stocks and gravies.
- Weight ratio: Approx. 7:1 - 100g of dried mushrooms yields roughly 700g once rehyrdated
COOKING
- The Gourmet Sear: Pan-fry on medium heat with garlic and herbs until the edges are golden and crispy.
- The Oven Roast: Bake at 200°C for 15 minutes to intensify the meaty texture.
- The Hearty Simmer: Braise or stew for 30+ minutes; the mushroom acts as a sponge for savoury flavours.
- The Fine Shred: Once rehydrated, pull apart or mince to use in plant-based seafood-style dishes.
